Bread
12g instant yeast
180ml full cream milk
400g plain flour
50g brown sugar
2 eggs
60ml melted butter
Salt
Apple and Cinnamon Filling
2tbsp cinnamon
1 large apple
20g room temperature butter
1tbsp brown sugar
Glaze
1tbsp milk
1 egg
Instructions
- Heat the milk and mix in the yeast and 1 tablespoon of brown sugar. When the milk starts to froth, it’s ready for use.
- Mix the flour, remaining brown sugar, a pinch of salt and cinnamon together in a large bowl. Add the melted butter, eggs and milk with yeast. Knead dough until smooth, place in a clean bowl and cover with a clean tea towel. Let dough proof for 1.5 hours, until doubled in size.
- While the dough is proving, peel the apple and cut into small cubes. Mix with cinnamon powder and brown sugar and set aside.
- Roll out the bread dough into a large rectangle and spread with the room temperature butter. Cover with apple cinnamon filling and cut into 4- 6 long vertical strips, stacking them on top of each other, Creating a long thin vertical stack. Next, cut the stack horizontally into six square cubes.
- Line a loaf tin or grease it with butter and turn each stack of dough, so the sides are facing upwards. Place the stacks in the loaf pan.
- Make the glaze by combining the egg and milk and brush over the bread. Leave it to proof for another 1.5 hours and preheat your oven to 180°C. Bake bread for 20 to 25 minutes. Let cool before removing from pan.
