60ml melted butter
Salt

Apple and Cinnamon Filling

2tbsp cinnamon
1 large apple
20g room temperature butter
1tbsp brown sugar

Instructions

  1. Heat the milk and mix in the yeast and 1 tablespoon of brown sugar. When the milk starts to froth, it’s ready for use.
  2. Mix the flour, remaining brown sugar, a pinch of salt and cinnamon together in a large bowl. Add the melted butter, eggs and milk with yeast. Knead dough until smooth, place in a clean bowl and cover with a clean tea towel. Let dough proof for 1.5 hours, until doubled in size.
  3. While the dough is proving, peel the apple and cut into small cubes. Mix with cinnamon powder and brown sugar and set aside.
  4. Roll out the bread dough into a large rectangle and spread with the room temperature butter. Cover with apple cinnamon filling and cut into 4- 6 long vertical strips, stacking them on top of each other, Creating a long thin vertical stack. Next, cut the stack horizontally into six square cubes.
  5. Line a loaf tin or grease it with butter and turn each stack of dough, so the sides are facing upwards. Place the stacks in the loaf pan.
  6. Make the glaze by combining the egg and milk and brush over the bread. Leave it to proof for another 1.5 hours and preheat your oven to 180°C. Bake bread for 20 to 25 minutes. Let cool before removing from pan.
